Parmesan Smashed Red Potatoes: One Pan Fish and Chips with Gorton’s Seafood

Ingredients

  • 12 small red potaotes
  • 2 TBSP olive oil (more or less to taste)
  • 1/2 cup fresh grated parmesan cheese
  • salt and pepper to taste

Instructions

  1. Place the red potatoes in a large pot and cover with cold water until water is at least an inch above the potatoes.  You can add salt to the water if you wish. Bring pot to a boil and once boiling set a timer for 15 minutes.  Once the timer is up test your potatoes with a sharp knife or fork.  If they aren't quite tender enough (depending on the size of the potatoes) add a few more minutes of boiling. 

  2. Strain the potatoes and evening place on your cookie sheet covered with parchment paper (hello no mess!) 

  3. At this point you want to preheat your oven to 450 degrees.

  4. Using a potato masher, smash each potato. This is a great step for children! If you don't have a potato masher you could also use a metal measuring cup or something else with a smooth hard base to get the job done.

  5. Season the smashed potatoes with salt and pepper, drizzle the potatoes with olive oil, and evenly sprinkle the parmesan cheese (you can use more than the 1/2 cup if you want them extra crispy and cheesy!).

  6. Add Gorton's Seafood Crispy Battered Fish Fillets to your pan and bake at 450 for 20 minutes. Serve hot and fresh out of the oven!

Recipe Notes

You could also mix in garden fresh herbs with the parmesan cheese for added flavor. Think chopped rosemary or minced oregano.
